The limits in the AWS accounts are set by Amazon based on a set of rules. While I have some insight into these I cannot speak on behalf of AWS. What I can say is that the limits are automatically increased once there is activity on an account as well as there being some degree of payment history. Of course that does not help those who have started an openSAP course and have a new AWS account.
If you have no access to an SAP system, other than the trial appliance, then I recommend calling AWS and explaning the fact that you are attending the openSAP course and are facing limits issues. Perhaps that may help.
In the meantime, I will direct the attention of some folks over at SAP (who work with AWS) & AWS to this thread, specifically to the limits topic.
Finally, just a note, the exercises are designed to be independant of each other and optional with no impact on the final result or knowledge gained.
