In Data Services Designer, open the Central Repository [Tools | Central Object Library]. Right click on any object, and select [Show History]. You can click any object version you wish, and select [Get Object by Version].
If you wish to "roll back" a version in the Central Object Library, get the Object by Version as above, then Check Out Object without Replacement, then Check In Object.
